Courgettes with Mushrooms Recipe
Ingredients:
- 1 tsp Ground Cumin
- 2 tbsp Vegetable Oil
- ½ tsp Chilli Powder
- 1 tsp Ground Coriander
- 1 Medium Onion, chopped
- 225 gms Mushrooms, sliced
- 2 Medium Courgettes (Zucchini)
- 1 tbsp Chopped Coriander
- 3 tbsps Single (light) Cream
Method:
- Heat the oil and fry the chopped onions until golden brown. Lower
the heat to medium, add the ground coriander, cumin, salt and chilli
powder and stir together well.
- Once the onion and the spices are well blended, add the mushrooms
and courgettes and stir-fry gently for about 5 minutes until soft. If
the mixture is too dry just add a little water to loosen.
- Finally pour in the cream and mix it well into the vegetables.
- Garnish with fresh chopped coriander, if wished and serve immediately.
