CRUNCHY APPLE BRAN MUFFINS

Ingredients:
1 cup (250ml) oats
• 1 cup (250ml) bran cereal
• 1 tbsp (15ml) baking powder
• 1/2 tbsp (2ml) cinnamon
• 1/4 tsp (1ml) salt
• 3/4 cup (85ml) walnuts, chopped
• 1 apple, chopped finely
• 2 tbsp (30ml) honey
• 1/3 cup (180ml) skimmed milk

• 2 large egg whites
• 2 tbsp (30ml) vegetable oil
Directions:
Preheat oven to 350F (180C). Mix all dry ingredients in a large bowl. In a small bowl combine remaining ingredients, mixing thoroughly. Add wet ingredients to dry and stir gently until mixed. Fill 12 lightly oiled or paper-lined muffin tins. Bake 15-20 minutes, or until lightly browned. Set aside 5 minutes before removing from muffin tins. Cool muffins on wire rack.
