Lamb curry is a popular choice at most households and a must at
festivities. A quick simple recipe to tickle the most demanding taste
buds
RECIPE
INGREDIENTS
1 Kg Baby Lamb on the bone - cut into small pieces
2 Large onions – thickly sliced
4-6 Cloves of Fresh Garlic – Crushed
2 Inch Piece of Ginger – Grated
1 tablespoon Cumin Seeds
1 tablespoon Coriander Seeds – Crushed
1 tablespoon Mustard Seeds
2-3 pieces Cinnamon sticks
8-10 Cloves
8-10 Black Peppercorns
4-6 whole Bay Leaves
1 Cup Vegetable Oil
Salt to taste
1 teaspoon Chilli Powder
1-1½ tablespoon Concentrated Tomato Puree
6-8 Whole Large Green Chillies
1 Handful of Fresh Coriander
METHOD
NOTE: I used a pressure cooker, if you haven’t got one use a non stick pan – it will just take longer to cook
1. Heat oil in a pressure cooker
2. Add all the ingredients except the last 5 items and mix well
3. Cook in the pressure cooker for 5-10 minutes or till meat is tender and cooked – Cooking Time will depend on your pressure cooker!!!!
4. Remove pressure cooker off heat and let cool completely till safe to open & open
5. Give the food a good mix
6. Place pot back on stove and increase the heat to maximum
7. Next add salt, chilli powder and tomato puree and mix well
8. Cook on high heat for another 5-10 minutes
9. Add green chillies and chopped coriander & mix well
10. Serve with Naan or Puri
