Strawberry Mousse Pie

This is a very simple recipe. It only takes 10 minutes to cook, and then the fridge takes care of the rest.
Preparation time:  40 minutes
Cooking time:  10 minutes
Serves:  6


Ingredients:
2 packs biscuits, (Marie or digestive)
150 g butter, melted
1 kg strawberries
3 to 4 tablespoons water
3/4 cup sugar
1 pack jelly, strawberry flavor
3/4 cup double cream or whipping cream
 
Directions:
    Process biscuits in a food processor or crush them. Add butter and mix with biscuits, using your hands. Press mixture on the bottom and sides of a pie pan. Refrigerate until you prepare the rest of the pie.
    Set 1 cup of the strawberries aside and blend the rest in a blender with 3 to 4 tablespoons water. Strain through a sieve in a bowl.
    In a saucepan, heat sugar and jelly powder over medium-low heat until completely dissolved. Add strained strawberries and cream and heat until mixture becomes smooth and creamy. Leave to cool.
    Pour mixture over crust in pan to form an even layer. Put back in fridge overnight. Use remaining strawberries to cover surface of the pie.
