Ingredients:
2 cups (500ml) whole wheat or whole grain flour
• 1 tsp (5ml) baking soda
• 1 tsp (5ml) baking powder
• 1/2 tsp (2ml) salt
• 1 egg
• 1 egg white
• 2 cups (500ml) labna
• 1 tsp (5ml) vanilla flavoring
• 2 tbsp (30ml) vegetable oil
• Fruit topping (see recipe below)
Directions:
In a large bowl, combine flour, baking soda, baking powderand salt. In a medium bowl, whisk together egg and egg white until very foamy. Add labna, vanilla, and oil. Stir into flour mixture until just moistened. In a heated non-stick pan, spread a thin film of vegetable oil and pour 1/3 cup (85ml) batter to form a 4 inch (10cm) pancake. Cook 2 to 3 minutes or until the bottom is browned. Turn and cook for 1 to 2 minutes longer. Keep warm. Cover with fruit topping.
FRUIT TOPPINGS
Strawberry Spread
• 1 cup strawberries
• 1 cup mashed bananas
Blend ingredients in a blender until smooth. Heat to a boil in a saucepan, then simmer until the mixture thickens. Stir frequently.
Apple Spread
Peel and core 6 apples, chop into small pieces and add half a teaspoon cinnamon, a quarter teaspoon nutmeg, and a teaspoon of lemon juice. Place in a pan with a quarter cup water and bring boil for ten to 15 minutes until mixture reaches the desired thickness.
Date Spread
Add 1 cup pitted dates to 1/2 cup (125ml) water. Boil gently for 6-8 minutes, stirring until smooth.
