Sooji Halwa

INGREDIENTS
1 Cup Fine Semolina
1½ - 2 Cup Sugar
3-4 Cups Water
1 teaspoon Lemon Juice
1 pinch of Saffron
8-10 Cardamom
25grm Unsalted Butter or Ghee

2 tablespoon of oil
1 tablespoon of Skinless Almond Flakes
1 handful Almonds
RECIPE
1. Crush half of the cardamoms pods and discard the shells
2. Add the cardamom seeds, water, sugar, lemon juice & saffron in a pan & mix well
3. Heat till it boils and then simmer on low heat
4. Heat a non stick wok
5. Add butter and oil and remainder cardamom
6. Add the semolina and fry till it turns a nice light brown colour – keep stirring and make sure the semolina does not burn
7. Add the syrup to the mixture and keep stirring
8. Cook for at least 5-7 minutes or till the halwa has absorbed all the moisture and is coming together
9. Once the halwa is to your desired consistency remove to serving dish and sprinkle with the nuts
