Green Beans with Tomatoes Recipe
Ingredients:
- 2 tbsp Olive oil
- 2 tsps Lemon Juice
- 150 ml Dry White Wine
- 16 Stoned Black olives
- 1 Large Onion, finely sliced
- 2 Garlic Pods, finely chopped
- 6 Ripe Plum Tomatoes, peeled, seeded and chopped
- 450 gms French green beans, sliced in half lenghtways
- Salt and Freshly Ground Black Pepper
Method:
- Heat the oil in a large frying pan. Add the onion and garlic and
cook for about 5 minutes, until the onion is softened but not brown.
- Add the chopped fresh plum tomatoes, white wine, sliced french green
beans, black olives and lemon juice and cook over a gentle heat for a
further 20 minutes. Stir the vegetables from time to time until the
sauce is thickened and the beans are just tender.
- Season with salt and black pepper to taste and serve.
